Boeuf (Beef) Bourguignon

INGREDIENTS

  • 250 ml (1 cup) Beef Broth
  • 50 ml (3 Tbsp) All purpose flour
  • 15 ml (1 Tbsp) Tomato Paste
  • 125 g (1/4 lb) Thick bacon or salt port (diced)
  • 1 kg (2 lbs) stewing beef, cubed
  • 250 ml (1 cup) chopped onions
  • 25 ml ( 2 Tbsp) Sherry Wine or Rye (optional)
  • 250 ml (1 cup) dry red wine
  • 5 ml (1 tsp) chopped parsley or dry parsley
  • 3 ml (1/2 tsp) salt
  • 1 ml (1/4 tsp) thyme
  • 1 ml (1/4 tsp) pepper
  • 1 ml (1/4 tsp) sugar
  • 1 bay leaf
  • 250 g (1 cup) fresh mushrooms sliced
  • 50 ml (1/4 cup) butter or margarine
  • 2 dozen pearl onions or 2 onions cut in quarter
  • 15 ml (1 Tbsp) butter or margarine
  • 2 large carrots (sliced) optional
  • 10 mini-potatoes (optional)
  • 3 tbsp of soya (optional)
  • 2 tsp of beef concentrate (optional)

DIRECTIONS

“Flour Mixture”

Mix together the broth, tomato paste and flour until blended.

(If using salt pork)

  1. Blanche in boiling water for about 5 minutes and dry
  2. Brown salt pork and when done remove from pan and set aside

(If using bacon)

  1. Brown bacon and remove bacon from pan and set aside.
  2. Drain oil from pan.

For both salt pork or bacon recipes

  1. Brown cubed beef on all sides and remove from pan.
  2. Drain oil from pan.
  3. Add the 1 cup of onions and sherry wine (or rye) and cooked over medium heat until onions are transparent.
  4. Pour “Flour Mixture” into pan and bring to a gentle boil, stirring constantly
  5. Add wine and seasonings (parsley, salt, sugar, thyme, pepper and bay leaf).
  6. Add the brown cubed meat and either bacon or salt pork
  7. Cover and simmer for 2 1/2 to 3 hours on stove top OR put everything into a Dutch Oven and put in oven at 325 degrees F. for 2 1/2 to 3 hours. (You can also put it into a slow cooker for 6 hours, add carrots and potatoes at this time along with soya and beef concentrate).
  8. If using a Dutch Oven add carrots and potatoes and optional soya and beef concentrate 40 minutes before serving.
  9. 15 minutes before serving sauté sliced mushrooms and (15 ml onions or 2 dozen pearl onions) in 50 ml of butter and add to meat mixture

Fresh Potato Salad

  • 3 lbs of cooked new potatoes (about 10 to 12) or small potatoes (keep skins on)
  • 1/2 cup of chicken stock
  • 3 tbsp white wine or apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 to 2 large garlic cloves (minced)
  • 1/2 tsp salt
  • 1/3 cup olive oil
  • 2 tbsp chopped chives or purple onion
  • 2 tbsp finely chopped fresh parsley
  • Fresh ground pepper

Directions

  1. Cut cooked potatoes into bite sizes pieces
  2. Toss warm potatoes with stock
  3. Let stand for 5 to 10 minutes or until stock is absorbed
  4. In another bowl, combine vinegar, mustard, garlic and salt
  5. Whisk in oil and pour over potatoes and toss
  6. Serve warm or cold

Scalloped Potatoes 3

  • 3-4 Russet or Yukon Gold Potatoes (sliced)
  • 1 TBSP butter
  • 2 Garlic cloves (minced)
  • 1 TBSP flour
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 to 1/3 cup Parmesan Cheese

Directions

  1. Put butter in pan and heat on medium-high heat (don’t burn the butter)
  2. Add minced garlic cloves and heat for a minute
  3. Add flour and whisk
  4. Add cup of milk and whisk til thickened
  5. Add  salt and pepper
  6. Pour sauce over sliced potatoes and sprinkle with Parmesan Cheese
  7. Back at 350 degree F. for 1 hour

Baked Potato

  • 4-8 russet potatoes (with skins on)
  • 1⁄4 cup olive oil
  • 1-2 tablespoon(s) of sea salt or kosher salt

Directions

  1. Preheat oven to 350 degrees F
  2. Rinse and scrub the potatoes, then dry them with a towel
  3. Put oil and salt in a bowl along with the potatoes
  4. Place potatoes on a foil lined baking sheet and pierce each potato with a knife or fork to allow steam to vent
  5. Put them in the oven and cook for 1 hour testing to ensure they are tender
  6. Remove from oven and serve with your favourite toppings

Optional toppings

  • margarine or butter
  • shredded cheddar cheese
  • sour cream
  • cracked black pepper
  • fresh chives, minced
  • bacon pieces

Greek Potato Salad

  • 3 pounds medium red potatoes, peeled and quartered
  • 1 teaspoon celery seeds
  • 1 cup extra virgin olive oil
  • 4 tablespoons red wine vinegar
  • 2 tablespoon packed fresh oregano leaves, finely minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 cups leaf lettuce head chopped or fresh spring mix
  • 1/2 cup green onions, finely chopped
  • 1 stock of celery (diced)
  • 5 hard-cooked eggs, peeled and sliced lengthwise (optional)

Preparation

  1. Prepare dressing by whisking oil, vinegar, oregano, salt and pepper into a small bowl. Set aside
  2. Peel and quarter potatoes, then boil until tender and can be pierced with a fork. Drain water.
  3. While still hot add celery seeds and about half of dressing over potatoes
  4. Cool potatoes in refrigerator, then add remaining oil, lettuce, green onions, celery and lettuce or spring mix along with optional mint
  5. Serve with cooked eggs

Garam Masala Garbanzo and Potatoes

Ingredients

  • 1 can of Garbanzo Beans
  • 3 Peeled White Potatoes, cubed
  • 1/4 cup cooking oil
  • 2 medium Onions chopped or sliced
  • 1 Tablespoon Garam Masala Seasoning
  • Water or Vegetable Stock
  • 1 Tablespoon Fresh Cilantro or Parsley chopped (optional)
  • 1/4 cup Coconut Milk or Cream (optional)

Directions

  1. Heat oil in skillet, add onions and stir fry until slightly brown
  2. Add potatoes and Garam Masala Seasoning, stir for 3 minutes until potatoes are coated
  3. Add the Garbanzo Beans, water or vegetable stock to just cover the vegetables
  4. Add coconut milk or cream, stir to mix all ingredients
  5. Cover and simmer over low heat until potatoes are cooked but not too soft
  6. Season with salt and pepper to taste
  7. Garnish with cilantro or parsley and serve

Easy Leftover Turkey Pot Pie

Ingredients

  • 1 frozen package of deep dish pie crust (contains 2 crusts)
  • 1 package of frozen peas and carrots
  • cold leftover diced turkey (white and dark meat)
  • cold leftover potatoes (mashed or diced, you can put both if you like)
  • cold leftover turkey gravy
  • 1 can of cream of chicken soup (more if needed)

Directions

  1. Mix together in a large bowl the diced turkey, potatoes and as many peas and carrots as you like
  2. Add gravy mixed with cream of chicken soup (add enough to moisten turkey mixture)
  3. Pour into a frozen pie crust
  4. Top with remaining frozen pie crust and pie plate
  5. Put into a freezer zip bag and place in the freezer until needed
  6. When ready to serve, preheat oven to 350 degrees F.
  7. Remove from freezer and freezer bag and place on a cookie sheet
  8. Cook with the pie plate still on the top for 30 minutes
  9. After 30 minutes, remove pie plate and cut slits in the pie crust and cook for an additional for 30 minutes or until hot and bubbly

Optional: If you have any additional mixture, place into a casserole or foil dish and top with stuffing or mashed potatoes. Cook for 45 to 60 minutes at 350 degrees F or until hot in the middle

Leftover Potato Muffins

Ingredients:

  • 3 cups of leftover mashed potatoes
  • 1 cup of grated cheese (put aside 1/4 cup for topping)
  • 1/4 cup of finely chopped green onions
  • 1 egg

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix mashed potatoes, 3/4 cup of grated cheese, green onions and an egg in a mixing bowl
  3. Press mixture into muffin tins
  4. Bake for 25 minutes or until sides turn golden brown
  5. 5 minutes before fully cooked sprinkle 1/4 cup of grated cheese and return to oven
  6. After the cheese has melted, remove from oven and let cool a few minutes before removing from muffin tins to maintain their shape.

Enjoy

Make it yours: top them with caramelized onions or leeks if you prefer

Imperial Chicken

Ingredients

  • 4 chicken breast fillets
  • 1 onion, finely chopped
  • 100 ml white wine
  • 240 g heavy cream
  • 200 ml hot water
  • 50 g capers, desalted
  • 50 g olives, pitted and sliced
  • 1 chicken or vegetable bouillon cube
  • 1 tablespoon Dijon mustard (or Sweet Russian Mustard)
  • 3 cloves of garlic, thinly sliced

For crust:

  1. 100 g bread, can be stale
  2. 40 g grated parmesan
  3. 60 g butter, softened
  4. some parsley, finely chopped
  5. salt
  6. pepper

Preparation

  1. Preheat oven to 180 C (350 F)
  2. Put chicken in a bowel and drizzle with olive oil and sprinkle with salt and pepper.
  3. Place the fillets into a hot fry pan and slightly brown on both sides. (the rest of the cooking will take place in the oven).
  4. Take the browned chicken and place them into a roasting pan. (Do not wash the fry pan as it will be used again in the next step)
  5. Using the fry pan add the chopped onion and sauté. Do not add any extra oil.
  6. Put in the wine and let it evaporate.
  7. Add the heavy cream, water, capers, olives, bouillon cube, garlic and Dijon mustard (prefer Sweet Russian Mustard)
  8. Bring to a boil and pour over the chicken fillets in the baking pan.

For the crust:

  1. Using a food processor, add the bread, salt, pepper and grated parmesan.
  2. Pulse until the bread has broken down in to small pieces.
  3. Add the butter and pulse 1-2 times.
  4. Add the parsley and pulse to mix.
  5. Place onto of the chicken fillets.
  6. Bake for 25-30 minutes, or until the crust turns golden brown and crunchy. Ensure the chicken is completely cooked.When ready, remove from oven and serve with mashed pototes or sweet potatoes.

Options: Add some fried leeks to your potatoes to add a little kick.

Chickpeas & Sweet Potatoes ~ wrks 4 Ginette

Heat a large saucepan over medium high.

Add:

  • 1 tsp. vegetable oil,
  • 1 finely chopped onion
  • 2 minced garlic clove
  • 2 tbsp. curry powder
  • 1 tbsp. ginger
  • ¼ tsp. salt
  1. Cook 2 min.
  2. Peel 2 small sweet potatoes and chopped into 2 inch pieces
  3. Stir into saucepan along with 796 ml can diced tomatoes
  4. Bring to a boil then reduce heat to medium low.
  5. Simmer covered 15 minutes\Stir in 540 ml chickpeas drained and rinse
  6. Continue cooking until potatoes are tender
  7. Serve with rice.
