Ingredients:
- 3 lbs of cooked new potatoes (about 10 to 12) or small potatoes (keep skins on)
- 1/2 cup of chicken stock
- 3 tbsp white wine or apple cider vinegar
- 1 tsp Dijon mustard
- 1 to 2 large garlic cloves (minced)
- 1/2 tsp salt
- 1/3 cup olive oil
- 2 tbsp chopped chives or purple onion
- 2 tbsp finely chopped fresh parsley
- Fresh ground pepper
Directions
- Cut cooked potatoes into bite sizes pieces
- Toss warm potatoes with stock
- Let stand for 5 to 10 minutes or until stock is absorbed
- In another bowl, combine vinegar, mustard, garlic and salt
- Whisk in oil and pour over potatoes and toss
- Serve warm or cold
