Ingredients
For Rub
- 4 Boneless Chicken Breasts
- Olive oil to rub onto breasts
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon paprika
For Stuffings
- 4 ounces (114 grams) plain cream cheese
- 1 1/2 cups of chopped baby spinach
- 1 teaspoon minced garlic
- 1/2 teaspoon red pepper flakes
- 1/2 cup grated Parmesan Cheese
- 2 tablespoons of Mayonnaise
Directions:
- Drizzle olive oil over both sides of chicken breasts
- Add all the “rub” ingredients into a bowl and sprinkle over both sides of chicken breasts
- Using a sharp knife, cut a pocket into the side of the chicken breasts
- Combine all the “Stuffing” ingredients into a bowl
- Spoon mixture into each chicken pocket
- Place breasts onto a baking sheet and bake 30 minutes at 375 degrees F. uncovered or until thoroughly cooked
