2 minute keto bread 2

Ingredientswrks4me_terry_tested-11

  • 1/2 cup (56 gm) Almond Flour
  • 1/2 Scoop (1 rounded tbsp or 15g) Unflavoured Whey Powder (if you don’t have Whey Powder use more Almond Flour) p.s. I have used Vanilla flavoured as well if you don’t have unflavoured. Can’t taste
  • 1/2 tsp (2-3gm) Erythritol (or your favourite sugar-free sweetener)
  • 1/2 tsp (2-3gm) Baking powder
  • 1/4 tsp Xanthan Gum
  • 70g Water (approx. 1/3 cup)
  • 1/8 tsp salt (optional)

Directions

2 minute keto bread

  1. Spray cooking oil into a 3 cup microwave-safe container
  2. In a separate bowl combine all ingredients until well mixed
  3. Put into the microwave container
  4. Put into the microwave and bake for 1 1/2 to 2 minutes depending on the power of your microwave
  5. Remove when cooled and cut in half and then in half again to get 4 pieces

Baked Bacon

  • Bacon

Directions

  1. Place bacon strips onto a foil lined baking sheet
  2. Place baking sheet into a 350 degree F. oven for 15-20 minutes (depending on how crispy you prefer it)
  3. Carefully remove from oven as there is a lot of grease
  4. Put bacon strips onto paper towels to absorb the grease

  • 1 1/3 cups (300 ml) of flour
  • 2 Tablespoons (25 ml) of sugar
  • 1 Tablespoon (15 ml) of baking powder
  • 1/2 teaspoon (3 ml) salt
  • 1 egg beaten
  • 1 1/4 cups (275 ml) milk
  • 2 Tablespoon (25 ml) melted butter or oil
  • 1/4 (1 ml) vanilla

Directions

  1. Combine flour, sugar, baking powder and salt in a small bowl.
  2. Combine beaten egg, milk, melted butter and vanilla
  3. Make a well in the center of the dry ingredients and pour liquid all at once
  4. Stir until it comes freely from side of bowl (don’t over mix)
  5. Lightly grease frying pan
  6. Cook pancakes until they are filled with bubbles and the under-surface is golden brown
  7. Turn and brown other side
  8. Serve immediately with syrup, honey, jam or jelly

Options

Spiced pancakes

Mix into dry ingredients

  • 1/4 (1 ml) teaspoon ginger
  • 1/8 (0.5 ml) teaspoon allspice
  • 1/4 teaspoon (1 ml) cinnamon
  • and use 1/2 teaspoon (2 ml) vanilla

Banana pancakes

Use only

  • 2 Teaspoons (10 ml) sugar

and add to liquid ingredients

  • 3/4 cup (175 ml) banana purée

Blueberry Pancakes

Use

  • 1/4 cup (50 ml) sugar

and add to dry ingredients

  • 1 cup (250 ml) fresh or frozen blueberries
  • 1/2 (2 ml) grated lemon rind

Here’s a great way to start your breakfast or end your hectic day with dinner

Ingredients

  • Eggs
  • Sweet pepper (red, green or yellow)
  • Weight Watcher’s Multigrain Thin Rolls

Preparation

  1. Cut Sweet Pepper into rings
  2. Place pepper rings in a microwave for 30 seconds
  3. Then in a frypan place pepper ring and drop egg into the middle
  4. Fry on medium heat and cover
  5. Cook for about 3 minutes then gently flip over and cook to your liking
  6. Serve on a toasted Thin Roll
  7. Dress it up with crumbled bacon or cheese on top, a slice of ham or tomato

Approx Calories: Egg (92) + Thin Roll (100) + Pepper Ring (8) = 200 Calories

  • 2/3 Almond Flour
  • 2 ounces of Cream Cheese
  • 2 eggs
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Spenda (add more if necessary)
  • 1 teaspoon Vanilla

Directions

Mix all together and put into a frypan on medium low heat
