Terry’s Chilly Winter Chili

Warm up this easy chili on a cold winter day.

Ingredients

  • 4 lbs Ground Beef
  • 2 Large Onions
  • 1 1/2 Green or Red Peppers
  • 1 small can of Tomato Paste
  • 2 cans Diced Tomatoes
  • 2 packs Club House Chili Seasoning (or equivilent)
  • 2 teaspoon of Garlic Powder
  • 2 teaspoon of Onion Powder
  • 1/2 tablespoon Salt
  • 1/2 tablespoon Ground Pepper
  • Options (Cayenne Pepper) to your taste

Instructions

  • Chop onions and peppers and place in crockpot
  • Brown Beef in a pan
  • In a crockpot add cooked ground beef
  • Add tomatoes, tomato paste, onions, Green or Red Peppers, Chili Seasoning, Garlic & Onion Powder, Salt and Ground Pepper and add to the crockpot
  • Cook for 6 hours on low
  • Optional: Season with Cayenne Pepper to your taste
  • Serve with grated sharp cheese

Terry’s Beef Stir Fry

Ingredients

  • 1 cup Water
  • 3 Tbsp Condensed Beef Broth (or substitute water and condensed beef broth for 1 cup of actual beef broth)
  • 3 Tbsp Soya Sauce
  • 3 Cloves of crushed garlic
  • 1/2 tsp red pepper flakes
  • 1 Tbsp cornstarch (2 tsp of Xanthan Gum)
  • 1 tsp sesame seed oil
  • 1 tsp canola oil
  • Beef cut into thin strips
  • Vegetables of your choice

Directions

  1. Put water, beef broth, soya sauce, pepper flakes and cornstarch or xanthan gum (into a measuring cup)
  2. In a pan, add canola oil. bring up heat and fry beef strips until tender.
  3. Remove beef from pan
  4. Add vegetables and garlic and cook until tender add sesame seed oil
  5. Add beef to vegetables and pour in broth mixture
  6. Stir until broth thickens
  7. Coat mixture with thickened broth
  8. Cover on low until tender

If on a Keto diet, serve over “cauliflower rice”, spagetti squash
For standard diet, serve over rice or noodles

Ingredients

  • 2 lb (1 kg) stewing beef cubes
  • 4 potatoes, peeled and cut in wedges
  • 3 carrots, cut in chunks
  • 3 onions, chopped
  • 6 cloves garlic, minced
  • 1-1/2 cups (375 mL) beef stock
  • 1 can (5 oz/156 mL) tomato paste
  • 1 bay leaf
  • 1 tbsp (15 mL) Worcestershire sauce
  • 1/2 tsp (2 mL) salt
  • 1/4 tsp (1 mL) pepper
  • 1 tsp paprika
  • 2 tbsp (25 mL) all-purpose flour

Directions

  1. Trim and cut beef into 1-inch (2.5 cm) cubes.
  2. In  an 18 to 24 cup (4.5 to 6 L) slow-cooker, mix together beef, potatoes, carrots, onions, garlic, beef stock, tomato paste, bay leaf and Worcestershire sauce.
  3. Cover and cook on Low for 10 to 12 hours (or on High for 5 to 6 hours) or until beef and vegetables are tender.
  4. Add peas, salt and pepper. Increase heat to High. Whisk flour with 2 tbsp (25 mL) water; stir into stew. Cook, covered, for 5 minutes or until thickened. Discard bay leaf.

This is a simple recipe that the kids would love to make.

Ingredients

  • 2 1/2 cups of chocolate chips
  • 2 tablespoon of butter (add more if necessary)
  • 2 cups of salted pretzel sticks

Directions

  1. Chop pretzel sticks into bite size pieces
  2. On top of a double boiler, melt chocolate and butter, stirring often.
    (You can also use a microwave to melt chocolate)
  3. Take pot off the stove and add pretzes
  4. Spoon onto a lined baking sheet and refrigerate for 20 minutes until firm

Options:

Peanut Butter Cow Chips

  • 1 1/2 cups of chocolate chips
  • 1 cup of butterscotch chips
  • 1/2 cup butter
  • 1/4 cup smooth peanut butter
  • 2 cups of salted pretzel sticks
  • 1 cup of salted peanuts

These are so good, I’d suggest doubling the recipe

Ingredients
  • 1-3/4 cups of all purpose flour
  • 2 tsp baking powder
  • 3/4 cup whole unblanched almonds
  • 2 eggs
  • 3/4 cup granulated sugar
  • 1/3 cup butter, melted
  • 2 tsp vanilla
  • 1/2 tsp almond extract
  • 1-1/2 tsp grated orange rine
  • 1 eggs white, lightly beatened
  1. In large bowl, combine flour and baking powder; stir in almonds. Whisk together eggs, sugar, butter, vanilla, almond extract and orange rind; stir into flour mixture until soft, sticky dough forms.
  2. Transfer dough to lightly floured work surface; with hands, form into smooth ball. Transfer to an ungreased baking sheet and form into a log. Brush tops with egg white and bake for 20 minutes at 350 degrees F.
  3. Remove from oven and let cool on a rack for 5 minutes. On a cutting board cut diagonally into 3/4 inch slices. Bake for 20 minutes long or until golden brown. Remove biscotti to rack and let cool.

Makes 24 cookies

Terry’s Best Baked Beans

Recipe #1 Traditional Baked Beans

  • 1 pkg (4 cups or 900g) of navy beanswrks4me_terry_tested-11
  • 1 large onion, finely diced
  • 3 Tablespoons molasses
  • 2 teaspoons of salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dry mustard or 1 tablespoon prepared mustard
  • 1 tablespoon Worcestershire sauce
  • 2/3 cup brown sugar
  1. Place beans in large bowl.
  2. Cover with water and soak overnight at room temperature. Add water, as needed, so that beans are always covered. Drain but reserve the water.
  3. Next day, bring beans to a boil and skim off foam from top. Simmer for 1 to 2 hours.
  4. Drain beans and reserve water for later
  5. Put beans in an oven proof container and pour reserved water over beans
  6. Put remaining ingredients into the bean mixture
  7. Bake in a 325 F. degree oven for about 3-4 hours or until tender, topping up the beans with reserved water as needed

Note: Instead of putting into the oven you can use a slow cooker 8-9 hours. Add diced pork chops if you like

Recipe #2 Maple Baked Beans

  • 1  pkg navy beans (4 cups or 900g)
  • 6 cups of water
  • 1 large onion finely chopped
  • 1/2 back bacon (cooked til crisp) or uncooked pork chops
  • 1 cup of Maple Syrup
  • 1/2 cup Molasses
  • 2 Teaspoons of Prepared or Dijon Mustard or 1/2 teaspoon dry Mustard
  • 1/3 cup Chili Sauce or Ketchup
  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 1 teaspoon of salt
  • 1 teaspoon of cracked pepper
  1. Place beans in large bowl. Cover with water and soak overnight at room temperature. Add water, as needed, so that beans are always covered. Drain but reserve the water.
    OR
    Put beans into a pot and cover with water, bring to a boil. Simmer on the stove for an hour to two hours until just tender not too cooked. Skim off and foam and drain the beans but reserve the water
  2. Mix together all the remaining ingredients and add the beans.
  3. Cover the beans with the reserved liquid
  4. Bake in a 325 F. degree oven for about 3-4 hours or until tender

Enjoy

Note: Instead of putting into the oven you can use a slow cooker for 8-9 hours

  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 black pepper
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon sage
  • dash cumin

Mix all together and store in sealed container. Sprinkle on poultry and bake.
