For the Pastry

  • 1 cup very cold butter cut into small cubes
  • 2 ½ cups flour
  • ½ tsp salt
  • ¼ to ⅓ cup ice water (Just enough to make a dough form)

For the Coconut Cream Filling

  • 3 cups whole milk
  • 1/3 cup flour
  • 2/3 cup sugar (you can also use sugar substitute)
  • 1/8 tsp of salt
  • 1 cup unsweetened fine coconut (sweetened coconut if you’re not on a specific diet)
  • 3 slightly beaten extra large egg yolks
  • 4 tbsp butter
  • 2 1/2 tsp vanilla extract
  • ¼ tsp pure almond extract

For the Vanilla Whipped Cream

  • 1 cup whipping cream
  • 1 tsp vanilla extract
  • 3 tbsp icing sugar (powdered sugar)

Preparation

  • For the pastry (sufficient for 2 pie shells)
  • Make sure to use cold butter, cut the butter into the flour and salt until your can still see find pieces of butter.
  • Add cold water into the mixture and using a fork  work it into a dough
  • Use your hands as little as possible to form 2 balls
  • Flatten each and place in the refrigerator wrapped in plastic (20 minutes). Note: you save one of the balls instead of flattening it by freezing it
  • Remove the flattened dough from the fridge and with a rolling pin, roll into a 12 inch round and put it in a 10 inch pie plate.
  • With a fork, poke a few holes inthe bottom and refridgerate for another 20 minutes before baking at 375 degrees F for 7-15 minutes or until golden brown. Watch carefully.
  • Cool completely before filling with cream pie mixture

Coconut Cream Filling

  • Bring milk to a boil in a microwave or to almost boiling on a stove top, set aside
  • Combine flour, sugar, salt and coconut into a bowl
  • In a separate bowl whisk together the egg yolks, vanilla and almond extract.
  • In a pot add 1 cup of warm milk and gently add flour mixture, whisking constantly over medium low heat (a double boiler works best and will not burn mixture)
  • As the mixture thickens, add another  cup of the warmed milk continue to whisk
  • Add the last cup of heated milk slowly into the egg mixture whisking as our pour
  • Pour the egg mixture into the pot and continue to heat until it reaches pudding consistency. The mixture should just begin to boil
  • Take off heat and add butter stirring until the butter is well blended
  • Let cool for at least 20 minutes, stirring every 5 minutes
  • Pour into baked pie shells and lay some plastic wrap onto of the filling
  • Refridgerate overnight before topping with the whipping cream

Vanilla Whipped Cream

  • Combine cold whipping cream, icing sugar and vanilla extract in a chilled bowl and beat to soft peaks. Spread over the pie and garnish with toasted coconut

Method

  • Remove neck and giblets from the turkey. Rinse cavity with water and pat dry with paper towels
  • Lightly butter the outside of the turkey. Wash hands and place turkey into the oven

When Fully Cooked

  • A meat thermometer inserted in the inner thight reads 180 degrees F (32 degrees C) for a stuffed turkey or 170 degrees F (77 degrees C) for an unstuffed turkey
  • When a fork is inserted the juices should run clear
  • Remove from the oven or barbecue. Cover with foil and let stand for 15 to 20 minutes before carving.

Traditional Bread Stuffing

Preparation
Melt butter in large skillet. Add onions and celery, cook stirring until tender, about 5 minutes. Add seasoning and pour over bread in a large bowl util well combined. Gradually stir in broth until just moistened. Do not wet.

Here’s a great way to start your breakfast or end your hectic day with dinner

Ingredients

  • Eggs
  • Sweet pepper (red, green or yellow)
  • Weight Watcher’s Multigrain Thin Rolls

Preparation

  1. Cut Sweet Pepper into rings
  2. Place pepper rings in a microwave for 30 seconds
  3. Then in a frypan place pepper ring and drop egg into the middle
  4. Fry on medium heat and cover
  5. Cook for about 3 minutes then gently flip over and cook to your liking
  6. Serve on a toasted Thin Roll
  7. Dress it up with crumbled bacon or cheese on top, a slice of ham or tomato

Approx Calories: Egg (92) + Thin Roll (100) + Pepper Ring (8) = 200 Calories

Terry’s Leftover Pasta Pie

This is an easy way of using your leftover pasta and making
a  dish everyone will love and enjoy to serve

Ingredients:

  • 10 cups cooked leftover pasta
  • 1 cup Leftover pasta sauce or your favourite bottled sauce
  • 1 1/2 cup Mozarella cheese
  • 1 cup grated Parmesan Cheese
  • 3 large eggs

Preparation:

  1.  In a large bowl, mix together the cooked pasta, eggs, Parmesan cheese, 1 cup of the mozzarella, and 3/4 cup of the pasta saucepasta pie 2.
  2. Grease a 9 or 10-inch pie pan or springform pan. Add the spaghetti mixture and press it down to level it. Top with the remaining pasta sauce, then scatter the remaining mozzarella on top.
  3. Bake the pie in the oven at 350 Degrees F for 30 to 35 minutes. Remove from the oven and let sit about 10 minutes.  Use a sharp knife cut into wedges like a pie.

Terry’s Chilly Winter Chili

Warm up this easy chili on a cold winter day.

Ingredients

  • 4 lbs Ground Beef
  • 2 Large Onions
  • 1 1/2 Green or Red Peppers
  • 1 small can of Tomato Paste
  • 2 cans Diced Tomatoes
  • 2 packs Club House Chili Seasoning (or equivilent)
  • 2 teaspoon of Garlic Powder
  • 2 teaspoon of Onion Powder
  • 1/2 tablespoon Salt
  • 1/2 tablespoon Ground Pepper
  • Options (Cayenne Pepper) to your taste

Instructions

  • Chop onions and peppers and place in crockpot
  • Brown Beef in a pan
  • In a crockpot add cooked ground beef
  • Add tomatoes, tomato paste, onions, Green or Red Peppers, Chili Seasoning, Garlic & Onion Powder, Salt and Ground Pepper and add to the crockpot
  • Cook for 6 hours on low
  • Optional: Season with Cayenne Pepper to your taste
  • Serve with grated sharp cheese

Microwave Fudge (sucre a la crème) ~ wrks 4 Ginette

Ingredients

  • 2 cups of packed brown sugar
  • 3/4 cups of softened butter
  • 1 tbsp of vanilla
  • 2 cups of icing sugar
  • 1 can of Eagle Brand condensed milk

Directions

  1. Mix together in a microwave safe bowl, brown sugar and softened butter
  2. Place in microwave on high for 8 minutes taking it out every 2 minutes until mixed
  3. After 8 minutes add 1 tbsp of vanilla and let sit for 5 minutes
  4. Mix in 2 cups of icing sugar and beat on high speed for 5 minutes. Pour into 9″ X 13″ buttered pan and place in refrigerator for one hour before cutting.

Chickpeas & Sweet Potatoes ~ wrks 4 Ginette

Heat a large saucepan over medium high.

Add:

  • 1 tsp. vegetable oil,
  • 1 finely chopped onion
  • 2 minced garlic clove
  • 2 tbsp. curry powder
  • 1 tbsp. ginger
  • ¼ tsp. salt
  1. Cook 2 min.
  2. Peel 2 small sweet potatoes and chopped into 2 inch pieces
  3. Stir into saucepan along with 796 ml can diced tomatoes
  4. Bring to a boil then reduce heat to medium low.
  5. Simmer covered 15 minutes\Stir in 540 ml chickpeas drained and rinse
  6. Continue cooking until potatoes are tender
  7. Serve with rice.

Ingredients

  • 1 cup chopped pecans
  • 1/2 (16-oz.) package farfalle (bow-tie) pasta
  • 1 pound fresh broccoli
  • 1 cup mayonnaise
  • 1/3 cup sugar
  • 1/3 cup diced red onion
  • 1/3 cup red wine vinegar
  • 1 teaspoon salt
  • 2 cups seedless red grapes, halved
  • 8 cooked bacon slices, crumbled

Preparation

1. Preheat oven to 350°. Bake pecans in a single layer in a shallow pan 5 to 7 minutes or until lightly toasted and fragrant, stirring halfway through.

2. Prepare pasta according to package directions.

3. Meanwhile, cut broccoli florets from stems, and separate florets into small pieces using tip of a paring knife. Peel away tough outer layer of stems, and finely chop stems.

4. Whisk together mayonnaise and next 4 ingredients in a large bowl; add broccoli, hot cooked pasta, and grapes, and stir to coat. Cover and chill 3 hours. Stir bacon and pecans into salad just before serving.

The following is a list of options for antihistamines that are known to be effective in dogs & cats. The name of the active ingredient is listed, with the name of a well known brand in parentheses. Also listed are approximate doses for different weights, and any precautions.
CAUTION: Do not purchase antihistamines that are combination products
(multi-symptom, cold/flu medicines, decongestants, etc.), especially products that contain decongestants (often labeled with a D, as in “Zyrtec-D”). These products often contain a high level of stimulants that are toxic, even life-threatening, to animals. In addition, products containing acetaminophen (active ingredient in Tylenol) are deadly for cats.
ANTIHISTAMINES AVAILABLE “OVER-THE-COUNTER”
1) Clemastine (formerly “Tavist”) – One of the more effective choices. Unfortunately, the over the counter form of Tavist containing the antihistamine “clemastine” has become unavailable. Therefore, we carry this antihistamine in our in-house pharmacy, in the 1.34mg strength.
Available in: 1.34mg tablets, 2.68mg tablets, and 0.67mg/5ml liquid
Dosage:
DOG WEIGHT (in pounds)                          Dose (tablet = 1.34mg tablet)
5-15                                                            (liquid) 1-2cc or ¼ tablet twice daily
15-25                                                             ½ tablet twice daily
25-50                                                              1 tablet twice daily
50-70                                                             1 or 2 tablets twice daily
Over 70                                                           2 tablets twice daily
CATS: ¼ to ½ tablet once daily (1.34mg tablets). Very effective in cats
May cause: sedation, hyperactivity, or diarrhea (in cats only).
Discuss with your veterinarian if your pet has: Prostatic hypertrophy (intact male dogs), urinary or GI obstruction, or severe heart disease
NOTE: Do not confuse this product with a similar product called “Tavist N.D,”
which is a different type of antihistamine, and is less effective.
2) Diphenhydramine (“Benadryl”)
Available in: 12.5mg children’s tablets, 25mg caplet, and 12.5mg/5ml liquid (liquid not recommended if it contains alcohol)
Dosage:

Discuss with your veterinarian if your pet has: glaucoma, GI or urinary obstruction, COPD (chronic lung disease), hyperthyroidism, seizure disorders, heart disease or high blood pressure.
NOTE: Do not use Diphenhydramine products that contain any other active ingredients (like acetaminophen). These other products are potentially toxic to your pet (especially cats!).
3) Chlorpheniramine (“Chlor Trimeton”)
Available in:  4mg tablets , and 2mg/5ml liquid

4) Cetirazine (Zyrtec – Reactine)
This may be the best antihistamine for eosinophillic inflammation (one of the primary cell types associated with allergies). It is a formerly prescription-only medication that is now available over the counter.

Ingredients

  • 800g (28 Oz) Ground Beef (2 lbs)
  • 8 Slices Chopped Bacon
  • 1/4 Cup Cheddar Cheese
  • 1 Onion sliced and fried till caramelized
  • 2 tsp. minced Garlic or 1 tsp garlic powder
  • 2 tsp. Black Pepper
  • 1 Tbsp. Soy Sauce
  • 1 tsp. Onion Powder
  • 1 tsp. Worcestershire

 Directions

  1. Cut up bacon before frying and fried until crisp
  2. Remove bacon and drain on paper towel
  3. Put onions into pan with bacon grease
  4. After frying pat off grease and dice onions
  5. Add bacon, onions and cheese to mixture
  6. Add remaining ingredients
  7. Form into patties
  8. Cook on BBQ 3 minutes each side turning 3 times total 9 minutes or until well cooked.
