Braided Cinnamon Knots & Rolls

INGREDIENTS

Dough

  • 2 cups whole milk, warm to the touch
  • ½ cup granulated sugar
  • ½ cup (1 stick) unsalted butter, melted (I use salted)
  • 2¼ teaspoons (1 packet) active dry yeast
  • 5 cups all-purpose flour (divided)
  • 1 teaspoon baking powder
  • 2 teaspoons kosher salt

Filling (I double this for more cinnamon flavour)

  • ¾ cup light brown sugar
  • 2 tablespoons ground cinnamon
  • ¾ cup (1½ sticks) unsalted butter, softened

Frosting

  • ½ cup cream cheese softened
  • 1 cup Icing Sugar
  • 2 Tbsp butter
  • 1 Tsp vanilla extract
  • 4 Tbsp milk (or heavy cream or half and half)

PREPARATION

Make the dough:

Cinnamon Braids before baking
  1. In a bowl, put in warmed milk, sugar and melted butter (warm to the touch, 100-110˚F (37-43˚C)
  2. Add yeast over top of the mixture and gentle mix. Cover bowl and let sit for 10 minutes in a warm place.
  3. Add 4 cups of the flour to the milk mixture and with a wooden spoon stir until combined. Cover with plastic wrap or a towel and place in a warm place to rise and double in size.
  4. Coat a baking tin and put aside until ready.
  5. While waiting the dough to rise cream butter, cinnamon and brown sugar together and set aside.
  6. After the hour is up, remove cover from dough and add the remaining flour, salt and baking powder. Combine well and put dough onto a clean floured surface. Dust dough with flour and kneed for at least 10 minutes adding a little extra flour as needed to keep it from being too sticky.
  7. Using a rolling pin, roll out dough to a large rectangle (12″-14″ x 17″).
  8. If making “rolls” (see diagram). Begin rolling the dough into a log from the short end. Continue rolling and place seam-side down.
  9. If making “knots” (see diagram). With long side towards you, fold 1/3 dough over the filling and then again the remaining 1/3. Cut into 12 equal strips. Using a sharp knife, cut down the length of each section to make 3 strands but leave attached at the top. Begin to braid each strand, then roll up the braids over itself and place seam side down into well greased “large muffin tins”. (you will need two)
  10. Trick in cutting: Use dental floss to the rolls, a knife will flatten them. Cut them into 12 equal pieces and depending on if you are making “Braided Knots” or “Rolls” place them into muffin tins or baking pans. Cover with a towel and allow them to rise another 35-45 minutes. Note: At this point you can cover them with plastic wrap and freeze them until ready.
  11. Place into a 350˚F (180˚C) preheated oven and bake for 25-30 minutes until lightly brown.
  12. While they are baking, make the frosting by putting all ingredients into a bowl and combine until well mixed.
  13. After cinnamon rolls or knots have been removed from oven, let stand for about 10 minutes and drizzle frosting over top.

Humminbird Cake

Cake

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 2 cups sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 3 large eggs
  • 1 1/2 cups vegetable oil
  • 1 1/2 tsp vanilla
  • 1 can crushed pineapple (NOT DRAINED) (8 ounces)
  • 2 cups chopped bananas (1 1/2 cups mashed) or 3 bananas
  • Shortening (for greasing pan)
  • 1 cup chopped pecans (toasted pecans)

Icing

  • 1/2 cup chopped pecans
  • 1/2-3/4 cup(s) flaked coconut (depending on your taste)
  • 1-2 package(s) of cream cheese (8 ounces ea., depending on your taste)
  • 1/2 cup of butter
  • 4 cups of icing sugar (16 ounces)
  • 1-2 teaspoons vanilla (depending on your taste)

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine flour, sugar, salt, baking soda and cinnamon in a large bowl
  3. Add eggs and oil, stir until ingredients are moistened
  4. Stir in vanilla, pineapple, bananas and 1 cup of chopped toasted pecans (put pecans on a baking sheet and put under the broiler for a minute or two while stirring to ensure they don’t burn)
  5. Pour batter into 3 well-greased and floured 9-inch cake pans
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes our clean.
  7. Remove from pans after cooling for about 10 minutes and then cool cake completely before icing (about 1 hour)
  8. Cream butter in mixer and add vanilla and gradually add icing sugar. Stir in coconut.
  9. Spread 1 cups of cream cheese icing over first layer and top with second layer and top with another cup of icing, then top with last layer and frost the top and sides with remaining icing. Decorate top with pecan half’s and pecan pieces

Note: I know prefer to use two jello roll pans (these pans are smaller than a cookie sheet) lined with parchment paper instead of cake pans. I use an ice cream scoop to divide the batter between the pans. This makes 4 equal layers. Back around 15-20 minutes instead of 30 minutes as they are less thick. Once each layer is cooled enough I simply cut them in half including the parchment paper and stack them onto of each other til I’m ready to frost them. I then remove the parchment paper and ice each layer but not the sides. I then trim each side to make it nice and neat. To serve cut the cake down the middle and then serve 1-2 inch slices.

Chicken stuffed with spinach Cropped

Ingredients

For Rub

  • 4 Boneless Chicken Breasts
  • Olive oil to rub onto breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika

For Stuffings

  • 4 ounces (114 grams) plain cream cheese
  • 1 1/2 cups of chopped baby spinach
  • 1 teaspoon minced garlic
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup grated Parmesan Cheese
  • 2 tablespoons of Mayonnaise

Directions:

  1. Drizzle olive oil over both sides of chicken breasts
  2. Add all the “rub” ingredients into a bowl and sprinkle over both sides of chicken breasts
  3. Using a sharp knife, cut a pocket into the side of the chicken breasts
  4. Combine all the “Stuffing” ingredients into a bowl
  5. Spoon mixture into each chicken pocket
  6. Place breasts onto a baking sheet and bake 30 minutes at 375 degrees F. uncovered or until thoroughly cooked

Ingredients

  • Baker’s Chocolate 2 oz 57 grams
  • Cream Cheese 12 oz 340 grams (microwave 30 seconds to soften
  • Vanilla 1.5 tablespoons
  • Butter 113 grams
  • 1 cup of sweetener (different sweeteners offer different degrees of sweetness, so start with 1/2 cup and and keep addding and adjusting accordingly
  • 1 cup chopped walnuts
  • 1/2 cup of coconut (unsweetened)

Preparation

  1. Add butter and chocolate on low pan
  2. Stir well
  3. Add Vanilla Extract
  4. Add 1/2 cup of Sweetener
  5. In a seperate bowl add Cream Cheese
  6. Pour chocolate mixture with cream cheese
  7. Use a hand blender to mix together
  8. Fold in coconut and walnuts
  9. Put into a greased 8″ x 8″ pan
  10. Put into freezer until hardened
  11. Take out and give it 5 minutes to soften before cutting. Store in fridge

Ingredients:
One challah bread (egg loaf or your favourite bread)
12 eggs
3/4 lb. grated old cheddar cheese
8 ounces of plain cream cheese cut into cubes (you can also use flavoured cream cheese
3/4 lb. grated Swiss cheese or your favourite cheese
2 cups milk
1/2 tsp. Dry mustard
1/2 tsp. salt
1 tbsp. chopped green onion (optional caramelized white onions or use leeks)
2 drops tobasco
3-4 drops Worcestershire
Directions:
1. Remove the crusts on the bread and tear into chunks (this is optional)
2. Place bread into 9X13 greased pan
3. Sprinkle the bread with the grated cheese.
4. Beat eggs and mix in all other ingredients. (Except cream cheese)
5. Pour egg mixture over bread and cheese
6. Fold in bread with egg mixture
7. Refrigerate overnight covered
8. Add cream cheese chunks throughout the mixture
9. Bake covered at 325 degrees F. for an one hour until egg  mixture is set. Uncover for an additional 10 minutes of baking.

Carrot Salad

  • 1 small orange jello
  • 3 oz Philadelphia Cream Cheese
  • 14 oz crushed pineapple
  • 2 carrots shredded
  • 1/2 pint whipping cream

Directions:

  1. Drain pineapple and put in sauce pan
  2. Bring juice of pineapple to a boil
  3. Add Jello and dissolve
  4. Remove from heat and set aside and cools a bit
  5. Add cream cheese to mixture and beat at low speed until (little pieces are left) let cool.
  6. Add pineapple and shredded carrot and fold in beatened whipped cream.
  7. Let cool overnight.
