Apple Cake

Ingredients:
3-4 very ripe Red Delicious apples, peeled and cored
1 cup all-purpose, unbleached flour
2 tsp baking powder
2 large eggs, plus one yolk
¾ cup granulated sugar
zest of one orange
1 tsp pure vanilla extract
½ cup extra-virgin olive oil
2 tbsp golden brown sugar
powdered sugar, for topping
Method:
Preheat the oven to 350 degrees F. Grease and flour a 9-inch round springform pan.

Place apples in a food processor and pulse apples but ensuring there are still chunks. You should have about 3 cups of apple puree. Set aside.

Mix flour and baking powder in a bowl. Set aside.

In another bowl mix eggs, sugar, and beat on medium until incorporated.

On low speed add orange zest and vanilla, increase speed until the eggs are foamy and light-yellow in color. Reduce speed to low and gradually add the olive oil in a steady stream. Add the apples and mix until combined.

Add the flour mixture a little t a time until all ingedients are incorprated.

Pour into a springform pan.

Top with brown sugar.

Bake for 1 hour, then cool.

Sprinkle with powdered sugar.

Saving on your Electricity Bill

With Ontario Hydro rates going up, what can we do to keep them low. That all depends on the what time of day you’re using electricity and what season you’re using as well. The best scenario is to use electricity only on weekends, holidays or at night as the electricity is billed at “Off Peak” rates all day.

Summer Usage

  • As “On Peak” rates are from 11 a.m. to 5 p.m. (That’s when our air conditioners are being used the most), use a programmable thermostat to raise the temperature during this time. Then use the thermostat again to cool the house back down early evening and again in the early morning. By reducing usage during peak times, you will be using electricity that is billed at a considerably lower rate.
  • Pools add to energy usage as they are motors running all the time. Best to put them on a timer so they run only at night when rates are lowest.
  • If you’re using an air conditioner close your window coverings during the day to keep the sunlight from heating up your house. And at night close your window covering to keep the cool in.

Winter Usage

  • Peak Usage is reversed from summer usage, rates are highest from 7 a.m. to 11 a.m. and again from 5 p.m. to 7 p.m. Even if you are using gas for heating instead of electricity, your furnace fan draws electricity and using it during “Off or Mid Peak” periods will help with your costs. Use your programmable thermostat to control when the furnace is being used most. Set your thermostat to 18 degrees while your asleep or away from home. For every degree you set lower can reduce your heating costs by 10 percent (gas and hydro usage)
  • Keep the cold out during the night and let the warm in during the day. Use window covering to keep the cold from coming in during the night by closing them and open them during the day to let sunlight in.
  • Use carpeting or rugs to help in heat retention during the winter months

Everyday Savings

  • Use your microwave or toaster oven for cooking as they only require 1/2 the power.
  • Use a BBQ for cooking, as this will keep your house from getting hot and you won’t incur any electrical charges.
  • When doing a laundry, do it after 7 p.m. on weekdays or wait for the weekends or holidays as they are only charged as “Off Peak” rates. Wait until there is a full load. Laundry accounts for 25 per cent of all hot water usage. If you use cold water for washing and rinsing you could save enough energy for about 200 showers. A typical load of dryer uses 3.3 kilowatts of power over 45 minutes. Here is approximately what you’d pay for a load of laundry at various “Peak” periods.
    Off Peak: 29 cents/load • Mid Peak: 43 cents/load • High Peak 60 cents/load
  • It’s hot outside, so use a clothesline instead of your dryer. Remember your electric dryer accounts for about 12 percent of the typical Hydro bill.
  • Using your dishwasher during “Off Peak” hours can save you 1/2 the cost of electricity verses “Peak” hours. Also, don’t use the heat to dry your dishing, use air dry instead.
  • Reduce Phantom Power: Electronics such as televisions, television boxes or recorders, computers, portable phones and any electrical device that uses a transformer draws power even though the devices are not in use. Many are in standby mode for quick activation. Many of these phantom power devices can be connected to a power bar and turned off when not in use ie: when you’re asleep or away. You can even put them on a timer so they turn off and on automatically.

  • Use a dimmer switch or purchase LED light bulbs. Remember not all LED bulbs are dimmable so check first for buying.
  • Look into putting in light sensor switches which will turn off your lights when no one is in a room.
  • Set your furnace fan to auto.

Making Your Own Spreadable Butter

butter-in-food-processorDon’t pay for spreadable butter anymore. Making your own is easy and inexpensive. Here is all you need.

  • 1/2 cup of butter (salted)
  • 1/3 – 1/2 cup of canola oil (the more oil the easier or spread)

Directions:

Cut butter into small pieces. Make sure the butter is not too cold as it needs to cream. Put butter and canola oil into a food processor or mixer and cream together. Put the mixture into a sealed container and refrigerate.

Aunt Terry-Lynn’s Carrot/Pasta Salad

  • 1 lb sliced carrots
  • 1 onion cut into rings
  • 1 green pepper
  • 1/2 cup celery

Dressing

  • 1/2 cup vinegar
  • 3/4 cup oil
  • 1 cup sugar or sugar substitute (Splenda)
  • 1 10 oz. can tomato soup
  • 1 teaspoon Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper

1/2 package of pasta twists
Cook carrots til tender. Slice onions into rings. Cut green pepper into pieces. Chop celery. Add vinegar, oil, sugar, tomato soup, salt and pepper to  cooked pasta twists

Terry’s Cheesy Cauliflower with Onion and Bacon Topping

  • 1 head of cauliflower
  • 1/8 cup water
  • 2 Tablespoon heavy cream
  • 2 Tablespoons butter
  • 1 cup of grated cheddar cheese (or cheese of your choice)
  • Salt & Pepper
  • 1/2 large onion (cut in thin rings)
  • Oil
  • 1/8 cup Maple Syrup or Sugar Free Syrup
  • Cooked Bacon pieces

Chop cauliflower and put into microwave dish with lid. Add 1/8 cup of water and place in microwave with lid. Microwave according to your settings until tender (not overdone). When done remove from microwave and drain water completely. Use a hand blender to purée the cauliflower. Stir in heavy cream and butter, salt, pepper and cheese.

Place onion rings in fry pan with oil and cook until browned and caramelised add Maple Syrup or Sugar Free Syrup. Place cauliflower purée into a serving dish or individual ramekins and put onions and bacon pieces on top. Return to microwave when ready to serve and heat for a minute or two extra.

Variations:

  • Instead of onions on top, fry up some leeks add them to the cauliflower as you purée
  • Instead of cheddar cheese, add a 1/4 cup of vegetable cream cheese

Peggy’s Cove, Nova Scotia is a wonderful small community on the eastern shore of Saint Margaret’s Bay. Here your will find an example of how wind and wave have shaped this rocky shores. You will also find Peggy’s Point Lighthouse, established in 1868.

Peggy’s Cove is not a place for very young children. The landscape is too rocky and treacherous for little legs. The rocks rise up from the sea and are covered with black algae which is very slippery. Many a person have slipped into the sea and have been buffeted against the rocks.

Make sure when your visiting to take the time to see the coast line by taking a tour by boat. Peggy’s Cove Boat Tours allows you that opportunity. More

Inside the Citadel

Halifax is a city full of history, culture and a vibrant waterfront. The heart of the city is Citadel Hill (Fort George). Halifax was founded in 1749, the same year this hill was fortified. Though never attacked, the Citadel played a key roll in the defense of Halifax Harbour. Today Parks Canada operates this historic site where you can tour during the day and even go in a ghost walk during various evenings.


I took their ghost walk and found out about the famous “Grey Lady”. The legend has it that she was a lovesick bride searching for her groom who committed suicide on their wedding day at the Citadel. She is seen either in a rocking chair or walking the Citadel wearing a white gown. Her story is so legendary that she appears on a Canadian stamp.

But the “Grey Lady” is not the only ghost story to come from the Citadel. There’s a story about some paranormal investigators that went to one of the prisons in the Citadel. Outside the cell they looked through a window only to see a man dressed in period costume. He was carrying a canon ball from one of side of the room to the other. When the investigators went to speak the the soldier, he was not to be seen. They searched to room for a hidden door but there was none. They went to the officials to complain about the rude soldier but was told that no one of that description worked in the Citadel and that the period costume had not been worn in over 25 years. More

Lise’s Pistachio Salad Recipe

  • 1 can crushed pineapple
  • 1 can of fruit cocktail
  • 2 cups of miniature marshmallows
  • 1 container of Cool Whip or 1 pkg prepared Dream Whip
  • 1 pkg of pistachio pudding
Drain fruit cocktail and place in a large bowl.   Add crushed pineapple and marshmallows.  Stir and let stand 15 minutes.  Add dry pudding mix.  Fold in Cool Whip until well blended.  Refrigerate for at least 15 minutes before serving, Best if left til overnight.

  • 1/2 Cup (125 ml) butter
  • 1 1/2 cups (375 ml) graham wafer cumbs
  • 1 can Sweetened Condensed Milk (Eagle Brand)
  • 1 cup (250 ml) Semi-Sweet Chocolate Chips
  • 1 1/4 cups (300 ml) flaked coconut
  • 1 cup (250 ml) chopped nuts

Preheat oven to 350 degrees F. or 325 F. for glass dish. In a 13×9 inch (3.5L) baking pan, melt butter in oven. Sprinkle graham crumbs over butter, mix together and press into pan. Pour Sweetened Condensed Milk evenly over crumbs. Sprinkle with Chocolate Chips, then Coconut and nuts; press down firmly. Bake 25 to 30 minutes or until lightly browned. Cool well before cutting. Store loosely covered at room temperature. Makes 24 bars.

Recipe:
For the crust:
1 cup almond meal
4 Tablespoons Butter (1 /4 cup) (cold)
4 Teaspoons stevia or Sugar Substitute (Splenda)
1/2 Teaspoon cinnamon

For the filling:
2 packages of cream cheese (8oz each), softened
2 eggs (Optional. Not necessary)
1 Tablespoon vanilla extract
3/4 cup stevia or Sugar Substitute (Splenda)
Juice and zest of 4 key limes or you can use 2 regular size limes

Preparation:
Preheat oven to 350 degrees.

Combine filling ingredients in a bowl and mix well. It should appear crumbly like shortbread. Divide among baking cups and use spoon to press into a crust.
Bake for 4 minutes.

While crusts are baking,
Combine filling ingredients and mix until well incorporated. Divide evenly between crusts.
Bake at 350 for 15-20 mins until crusts are slightly cracked but not brown.
Remove and cool overnight.

Serve with whipped cream and berries
