Easy Cinnamon Apple Cake

Keep a can of apple pie filling and a roll or two of cinnamon rolls so that if you get unexpected people dropping by or just have a craving, you have a delicious cake at the ready.

Ingredients

  • 1 can apple pie filling (540 ml)
  • 1 or 2 cinnamon rolls with icing (351 g)
  • 1 cup chopped pecans (optional)

Directions

  1. Depending on the how many people you wish to serve you can use 1 or 2 cinnamon roll tubes. (Using 1/2 can of pie filling and 1 cinnamon roll will yield you 6 servings in an 8″x8″ pan) If you use a full can of pie filling you will need 2 cinnamon rolls and a 9″x13″ pan.
  2. Open your tubes of cinnamon rolls and separate the sections
  3. Cut each section into quarters with a knife or scissors and put into a bowl
  4. Open the can of pie filling and depending on how many tubes you are using cut apple slices into smaller pieces, and put them in the bowl with the cinnamon rolls.
  5. Gently fold the apple pieces and 1/2 the pie filling mixture together
  6. Coat the cooking pan with cooking spray and pour the mixture into it
  7. If using pecans, sprinkle over top
  8. Bake in a preheated over at 375 degrees F for 30 minutes
  9. Let cool at least a 1/2 hour before drizzling the icing from the cinnamon tubes over top.

Good to know?

  • Apples are members of the rose family
  • Apple trees take about 4 to 5 years to produce fruit
  • Apple trees may be propagated by budding or grafting
  • Pour a little citric juice (ie. lemon, lime, grapefruit or apple juices) or even saltwater over peeled apples to prevent them from browning
  • Smaller apples keep longer than larger ones
  • Store baskets or bushels of apples covered with perforated plastic in the dark in a well-ventilated room 32-39 degrees F. (0-4 degrees C) to prevent shrivelling
  • It takes about six medium apples about 2lbs (900g) for a 9″ pie or 3 cups (700ml) of apple sauce

Old Fashioned Apple Pie

Ingredientswrks4me_terry_tested-11

  • 4-8 apples 20 oz (I use Gala)
  • 2 Tablepoons of lemon juice
  • 2/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 3 Tablespoons flour
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 tablespoons butter

Crumble Topping

  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 1/4 cup (packed) golden brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 6 tablespoons chilled unsalted butter, cut into 1/2-inch cubes

Directions

  1. Peel and slice apples and add lemon juice to prevent browning
  2. Combine all dry ingredients and toss together with apples
  3. Put into a prepared unbaked pie shell
  4. Top with pie pastry and add slits to allow steam to escape or top with a Crumble Topping.
  5. Bake at 425 degrees F for 15 minutes then turn down to 350 degees F for 45 minutes. If the edges are getting too brown, place strips of foil around the edge while baking.

Directions for Crumble Toppings

Mix together all ingredients until they resemble course meal and sprinkle on top of pie mixture

Autumn Apple Crisp with Walnut Topping

Apple Crisp - Full

INGREDIENTS

For Filling

  • 8 apples – peeled and cored and sliced into bite sized pieces
    (choose from Cortland, Empire, Spartan)
  • Juice of 1/2 lemonwrks4me_terry_tested-11
  • 1/3 cup of white sugar
  • 1/3 cup packed brown sugar
  • 1 tablespoon of water
  • 1/4 tsp cinnamon
  • 2 tablespoon of butter

Apple CrispFor Topping

  • 1/2 cup all purpose flour
  • 1/2 cup melted butter
  • 1/2 cup rolled oats
  • 1/2 cup of chopped walnuts
  • 1/4 cup of white sugar
  • 1/4 cup of brown sugar

DIRECTIONS

Start with topping first

  1. Combine all dry ingredients together in a bowl
  2. Pour in melted butter and mix well
  3. Set aside until filling is ready

For filling

  1. Preheat oven to 375 degrees F.
  2. Put diced apples into a bowl and drizzle lemon juice over top to prevent browning of apples
  3. Into a pan add butter, white and brown sugar and cinnamon
  4. Cook over medium heat mixing regularly til sugar is caramelized
  5. Add apples and coat them with sugar mixture
  6. Add water and cook til medium tender
  7. Pour mixture into an oven proof dish
  8. Sprinkle topping over top of apples
  9. Bake oven for 20-30 minutes

Remove from oven and serve with ice cream

Apple Streusel Cake

Streusel Topping

  • 1/2 cup (65 grams) all purpose flour
  • 1/4 cup (55 grams) firmly packed light brown sugar
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 3 tablespoons (40 grams) cold unsalted butter, cut into small pieces
  • 1/2 cup (50 grams) toasted and coarsely chopped nuts (can use almonds, hazelnuts, walnuts or pecans)

Batter

  • 3 cups of diced apples (either delicious, cortland, macintosh, honey crisp, empire, spartan apples)
  • 1 cup of flour
  • 2 teaspoons of baking powder
  • 1/4 cup of vegetable oil (canola)
  • 1 teaspoon vanilla
  • 2 eggs + 1 egg yolk
  • 3/4 cup sugar
  • Zest of 1 orange
  • 3 large apples (sliced for top of cake)

Note: For Keto (low carb diet) substitute 1 cup of flour for 1/2 cup of gluten free flour mixture and 1/2 cup of Almond flour. Instead of 2 eggs + 1 yolk substitute with 3 egg white, whipped to soft peaks and add 1/2 teaspoon of cream of tarter along with 1 egg yolk. For the topping use Splenda instead of brown sugar and use gluten free flour mixture.

Directions

  1. Preheat oven to 350 degrees F

Topping

Put flour, cinnamon, salt and brown sugar into a bowl. Cut in cold butter and with your hands combining until mixture resembles a coarse meal. Mix in the nuts. Set aside

Batter

  1. Mixture 1: In a bowl combine eggs and sugar and vanilla and beat until light and fluffy
  2. Mixture 2: Take 2 cups of apples and put in a food processor and pulse to make small pieces. Put into a bowl and add the remaining apple pieces and orange zest
  3. Mixture 3: Combine flour and baking powder in a bowl
  4. Combine mixture 1 and 2 together. Then stir in mixture 3 (flour combination) a little at a time to the combined mixture 1 and 2
  5. Add 1/2 cup of vegetable oil and stir
  6. Grease and flour a spring form pan
  7. Pour batter into pan
  8. Slice your 3 large apples and arrange on top of the batter

  10. Bake in a spring form pan (1 hour) or until toothpick comes out clean
