
Ingredients

- 4 cups cubed cooked chicken breast (or dark meat blend)
- 1-1/2 cups dried cranberries
- 2 green onions, thinly sliced (or use 2 Tablespoons of chives or sweet onion)
- 2 celery ribs, finely chopped
- 1 cup fat-free mayonnaise
- 1/4 cup chopped sweet pickles
- 1/2 teaspoon curry powder
- 1 Tablespoon honey
- 1/4 teaspoon coarsely ground pepper
- 1/2 cup chopped pecans, toasted
- 16 dinner rolls (Brioche or soft rolls
- Butter
Directions
- Put chicken, cranberries, celery, green onions, pickles into a bowl
- Mix honey, curry powder and mayonnaise together in a separate bowl
- Blend together the mayonnaise and chicken mixture
- Butter the split rolls and spoon the blended chicken mixture onto the rolls
