Ingredients
- 1 tbsp butter
- 1 large onion chopped
- 3 large potatoes diced
- 2 large leeks, thinly sliced
- 8 cups of chicken or vegetable stock
- 3/4 cup of heavy cream
- salt and pepper to taste
Preparation
Put butter, onions and leeks into a large pot
- Cook 5-8 minutes until vegetables are softened
- Add potatoes and vegetable stock
- Bring to a boil then reduce heat and cook until potatoes are cooked and soft
- Stir in cream
- Use a hand blender or a blender until smooth
