
Ingredients

- 2 cups All Purpose Flour
- 1 tsp salt
- 1 Tbsp Cinnamon
- 1/2 tsp Nutmeg
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 2 Cups Shredded Zucchini
- 2 large eggs
- 1 tsp Vanilla Extract
- 1/4 cup Vegetable Oil
- 1 Cup Brown Sugar
- 1 cup of chopped Walnuts
Icing
- 1/2 to 3/4 cup Powder Sugar
- 2 tsp Water
- 1/3 cups chopped Walnuts
Directions
- Preheat oven to 350 degrees F.
- Combine all ingredients and mix well
- Pour into an 11″ x 7″ baking dish
- Bake for 30 minutes or until a toothpick comes out clean
- Cool and prepare icing
- Combine icing sugar and water until it is well mixed
- Drizzle over the cooled cake and sprinkle with chopped walnuts
