Farm House Pancakes

Ingredients

Dry ingredients

  • 1 1/3 cups (300 ml) all purpose flour
  • 2 TBSP (25 ml) sugar
  • 1 TBSP (15 ml) baking powder
  • 1/2 tsp (3 ml) salt

Wet Ingredients

  • 1 egg beaten
  • 1 1/4 cups (275 ml) milk
  • 2 TBSP (25 ml) melted butter or vegetable oil
  • 1/2 tsp (3 ml) vanilla

Cinnamon Pancakes

  • 1 tsp (5 ml) cinnamon
  • Add to dry ingredients

Spicy Pancakes

  • 1/4-1/2 tsp (1 to 3 ml) ginger
  • 1/8-1/4 tsp (0.5 to 1 ml) allspice
  • 1/2- tsp (1 ml) cinnamon
  • 1/2 tsp (2 ml) vanilla
  • Add to dry ingredients

Buttermilk Pancakes

  • Use only 1 1/2 tsp (7 ml) baking powder
  • 1 tsp (5 ml) baking soda and 1 tsp (5 ml) hot water

Replace milk with buttermilk (make your own by adding 1 TBSP lemon juice or apple cider vinegar) and add to batter and baking soda and water mixture

Blueberry Pancakes

  • Use only 1/4 cup (50 ml) sugar
  • 1 cup (250 ml) fresh or frozen blueberries
  • Add to dry ingredients

Banana Pancakes

  • Use only 2 tsp (10 ml) sugar
  • 3/4 (175 ml) banana puree
  • Add to dry ingredients

Apple Pancakes

  • 1 medium apple, peeled and grated
  • 1/4 tsp (1 ml) nutmeg
  • Add to dry ingredients

Instructions

  1. Combine four sugar, baking powder and salt. In a small bowl, combine beaten egg, milk, melted butter (or vegetable oil) and vanilla.
  2. Make a well in the center of the dry ingredients and pour liquid all at once.
  3. Stir quickly until it comes freely from the side of the bowl.
  4. Heat a medium hot pan or griddle and butter
  5. Pour a small amount into pan or griddle and cook pancakes until they are filled with bubbles and undersurface is golden brown.
  6. Turn and brown other side
  7. Serve immediately with syrup, honey, jam or jelly

Quick and Easy Quiche

Ingredients

  • 1 ready made crust unbaked
  • 6 large eggs
  • 3/4 cup milk or cream
  • 1/2-3/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cubed cooked ham (optional)
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 3 TBSP sliced green onion (optional)

Directions

  1. Prehead oven to 375 degrees F
  2. In a large bowl, whisk in the eggs, milk, salt and pepper
  3. Sprinkle ham, 1 cup of cheese and onions into the bottom fo the pie shell
  4. Sprinkle remaining cheese on top of egg mixture
  5. Bake for 35-40 minutes until the center is completely cooked. Let cool for 5-10 minutes before serving

Milk Cake

Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 4 large eggs
  • 2 cups sugar
  • 1/4 tsp salt
  • 2 tsp of vanilla
  • 1/2 cups or one stick unsalted butter
  • 1 cup whole milk

Directions

  1. Mix flour and baking powder into a bowl and put aside
  2. In a separate bowl beat together eggs, sugar, salt and vanilla til light and fluffy
  3. Fold in flour mixture to egg mixture. Make sure not to overwork mixture. Set aside
  4. In a pot add milk and butter and heat to the beginning of a boil
  5. Pour milk mixture into the egg and flour mixture a little at a time so the eggs don’t cook.
  6. Pour mixture into a 9″x13″ pan and bake at 350 degrees F for 30-40 minutes, or until toothpick comes out clean.
  7. Allow to cool and serve with fruit, whipped cream or frosting

Note: This is a very light cake and will only last for about 2-3 days before getting dry. Pop it into the microwave to freshen it up if needed.

Greek Potato Salad

  • 3 pounds medium red potatoes, peeled and quartered
  • 1 teaspoon celery seeds
  • 1 cup extra virgin olive oil
  • 4 tablespoons red wine vinegar
  • 2 tablespoon packed fresh oregano leaves, finely minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 cups leaf lettuce head chopped or fresh spring mix
  • 1/2 cup green onions, finely chopped
  • 1 stock of celery (diced)
  • 5 hard-cooked eggs, peeled and sliced lengthwise (optional)

Preparation

  1. Prepare dressing by whisking oil, vinegar, oregano, salt and pepper into a small bowl. Set aside
  2. Peel and quarter potatoes, then boil until tender and can be pierced with a fork. Drain water.
  3. While still hot add celery seeds and about half of dressing over potatoes
  4. Cool potatoes in refrigerator, then add remaining oil, lettuce, green onions, celery and lettuce or spring mix along with optional mint
  5. Serve with cooked eggs

Pepper Ring Eggs

Here’s a great way to start your breakfast or end your hectic day with dinner

Ingredients

  • Eggs
  • Sweet pepper (red, green or yellow)
  • Weight Watcher’s Multigrain Thin Rolls

Preparation

  1. Cut Sweet Pepper into rings
  2. Place pepper rings in a microwave for 30 seconds
  3. Then in a frypan place pepper ring and drop egg into the middle
  4. Fry on medium heat and cover
  5. Cook for about 3 minutes then gently flip over and cook to your liking
  6. Serve on a toasted Thin Roll
  7. Dress it up with crumbled bacon or cheese on top, a slice of ham or tomato

Approx Calories: Egg (92) + Thin Roll (100) + Pepper Ring (8) = 200 Calories
