Taco Ring

Dipping Sauce

  • 1/2 cup Mayo
  • 1/2 cup Butter Milk
  • 1/4 Cup Pave Salsa
  • 1/2 package ranche dressing

Taco Ring

  • 1 1/4 pound ground beef
  • 2 cans crescent rolls
  • 7 oz package of shredding Mexican cheese blend or your favourite cheese, ie. cheddar, mozzarella

Taco Seasoning

  • 1 Tbsp chili powder
  • 1 tsp paprika
  • 1 Tbsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1-2 Tbsp Knorr chicken bouillon

Directions

  1. Preheat oven to 375 F
  2. Brown ground beef in skillet
  3. Drain any excess grease
  4. Add all the seasoning
  5. Add 1 1/2 cups water to skillet and let the seasoning simmer for 3-5 minutes
  6. Remove from heat and stir in shredded cheese
  7. On a pizza pan or baking sheet arrange crescent rolls in a circle with wide ends toward circle and pointing outward. Use a small bowl for help form the ring. Remember to remove it when ring is formed
  8. Spoon meat mixture over the crescent roll ring, keeping mixture close to center
  9. Fold the pointed ends up over the meat and tuck them underneath to seal
  10. Bake for 20-35 minutes until golden brown

Curry Chicken Salad Sandwiches

Ingredients

  • 4 cups cubed cooked chicken breast (or dark meat blend)
  • 1-1/2 cups dried cranberries
  • 2 green onions, thinly sliced (or use 2 Tablespoons of chives or sweet onion)
  • 2 celery ribs, finely chopped
  • 1 cup fat-free mayonnaise
  • 1/4 cup chopped sweet pickles
  • 1/2 teaspoon curry powder
  • 1 Tablespoon honey
  • 1/4 teaspoon coarsely ground pepper
  • 1/2 cup chopped pecans, toasted
  • 16 dinner rolls (Brioche or soft rolls
  • Butter

Directions

  1. Put chicken, cranberries, celery, green onions, pickles into a bowl
  2. Mix honey, curry powder and mayonnaise together in a separate bowl
  3. Blend together the mayonnaise and chicken mixture
  4. Butter the split rolls and spoon the blended chicken mixture onto the rolls

Enjoy

Note: you can also serve this chicken salad mixture on top of a salad instead

Baked Brie or Camembert

Baked Brie

  •  Brie or Camembert
  • 1 White onion
  • 1/2 cup of Cranberries
  • Drizzle of Maple Syrup (you can also use your favourite table syrup including low sugar
  • Pad of butter for frying

Directions

  1. Put brie or cambembert into a brie baker, small pyrex with lid any other microwave or oven safe container
  2. Slice onions and put into a fry pan with butter and fry until translucent
  3. Put in cranberries and drizzle with maple syrup
  4. Pour over brie or camembert
  5. When ready for serving put into a microwave for 1-2 minutes or until cheese is soft.
    Or bake in an oven at 350 degrees F for 15-20 minutes depending on the size of the cheese ring
  6. When ready, spread over sliced pieces of baguette bread (If you are low carb serve with sliced apples or pears, flaxseed crackers or cucumber sticks.

Lucy's Humungus Sandwitch

This monstrous sandwich is great as a family meal served with a hearty soup or can be served at a party along with cold beer

Ingredients

  • Sourdough bread
  • Variety of your favourite cold cut meats
  • Your Favourite Cheeses
  • Green and Black Olives
  • Mayonnaise
  • Mustard

Directions

  1. Mix 2 tablespoons of Mayonnaise and 5 tablespoons Mustard together and put aside
  2. Put 1/2 cup each of green and black olives together and mince together and put aside
  3. Cut the top of the bread and put aside
  4. Hollow out the bread
  5. Start by spreading some of the Mayo-Mustard mixture along the bottom of the bread
  6. Layer meats and cheeses then a layer of Mayo-Mustard
  7. Keep repeating til you come to the middle layer
  8. When you get to the middle layer add the olive mixture as a layer
  9. Continue layering the meats and cheese and May-Mustard
  10. Top it off with the remaining mustard
  11. Put the top of the bread back on
  12. Wrap the whole sandwich in plastic wrap or in a plastic bag
  13. Refrigerate overnight
  14. Serve cold

Baked Kraft Dinner

Kraft Dinner Muffins

Ingredients

  • Kraft Dinner
  • Butter
  • Milk
  • Italian bread crumbs

Directions

  1. Prepare Kraft Dinner as usual with milk and butter added after noodles are cooked
  2. Sprinkle Italian bread crumbs around the edges of the muffin tin
  3. Spoon into muffin tin sprayed with oil (large for lunch or dinner, small for appetizers)
  4. Sprinkle Italian bread crumbs on top of the mixture
  5. Bake at 350 degrees F for 10 to 12 minutes or until golden brown. Take them out and let them rest for 5-10 minutes before plating

Options

You can add vegetables, ham, chicken, salmon, tuna or extra cheese

Bacon Wrapped Chestnuts

Ingredients:

  • 1 pound thick cut bacon
  • 1 (8 ounce) can water chestnuts

Instructions:

Slice bacon in half; wrap one piece bacon around one chestnut. Skewer with toothpick to hold in place.
Broil in toaster oven or conventional oven, turning frequently, until the bacon is evenly cooked. Serve warm.

Easy Cheese Ball

Ingredients:

  • 2 (8 ounce) packages cream cheese
  • 1 (.7 ounce) package dry Italian-style salad dressing mix
  • 1 cup chopped nuts (walnuts, pecans)

Directions:

In a large bowl, mix together cream cheese and salad dressing mix. Shape into 1 large ball and roll in chopped nuts.
Refrigerate cheese ball for several hours or overnight.
